QUESTION: What is UHT milk and why does it have 6 months shelf life?ANSWER: The aseptic method for milk processing is called UHT /ultra-high temperature/, where milk is very quickly heated up to a temperature of 135-150 С and a few seconds later is cooled down to room temperature. The whole process is performed in a closed sterile system in order to avoid potential contamination. Thus milk germs are completely killed, while the taste, the structure and the nutrition content are preserved.

Besides the production process, it`s extremely important that the milk be stored in the best possible way, so that all valuable components are preserved. Here the packaging comes into play, determining the quality and the long durability of the product until it is consumed. Thus the expiry date of milk is prolonged up to 6 moths from the production date, and can be stored at room temperature even during summer.

QUESTION: Why consume low fat milk? Are all beneficial ingredients of milk preserved after skimming?ANSWER: In our hectic everyday life we consume more and more fast food and pre-fabricated products, which usually have a high fat content. In Bulgaria nearly 39% of all men and approximately 33% of all women above the age of 15 are obese. The percentage of obese children and teenagers is 10-12%. After the age of 40 the number of Bulgarian people, who are overweight (incl. those who are obese) significantly increases, whereas for the 50-59 age group it is over 50%. That is why the consumption of low fat products is healthy and highly recommended by doctors. During milk skimming only the content of fat soluble vitamins is reduced. All other components beneficial for the human body as proteins, amino acids, minerals and water soluble vitamins are preserved.
